Slow Cooker Chicken Tacos

Too busy to get dinner on the table? Try these slow cooker chicken tacos. They are oh so easy to make, and they taste delicious, too!

I don’t know about you, but my evenings are hectic. Between homework, sports practice, meetings, and other activities, sometimes there is just no time to cook dinner. But in our little town, takeout options are limited, and these days they’re also pretty expensive.

So, what’s a busy, stressed-out mom to do? Call for reinforcements- the slow cooker! The slow cooker is my best friend on days like these. And these slow cooker chicken tacos are a go-to meal for my family. It only takes a few minutes of prep work, and the end result is not only delicious, but super versatile!

You’re going to start by adding some chicken breasts to your slow cooker. 3 is the magic number at my house- this gives us plenty for dinner, plus some extra for leftovers. But you can use more or less chicken, just adjust your other ingredients accordingly.

Now, you’ve got to give that chicken some flavor. You’re going to need some salsa and taco seasoning for this. Check out my recipe for homemade taco seasoning, or if you’re in a pinch, just use a packet from the store. About a cup and a half of salsa and a couple of tablespoons of taco seasoning is the perfect ratio for us. But again, you can adjust this to your family’s tastes.

You’re going to let that cook in the slow cooker on low for eight hours or on high for four hours. And you’re basically done- the slow cooker did all the work for you! Just shred your chicken- it should be super tender and easy to shred with just two forks- and mix everything together.

I like to shred my chicken on a separate plate, but you can also do it right in the slow cooker.

Another great thing about these slow cooker chicken tacos is that once you get to this point, you can turn your slow cooker to the warm setting and leave it on all evening. This is perfect for those evenings when everyone is coming and going at different times, or if you have a little time in the afternoon to prep before heading to your evening activities.

Now, all you need is some tortillas and your taco accessories- you know, all that good stuff to pile on top of your chicken. We love shredded lettuce, tomato, onion, sour cream and cheddar cheese. But the sky’s the limit! Add whatever suits your fancy!

This recipe is also great as a base for other Mexican dishes. You can use the cooked, shredded chicken in burritos, enchiladas, taco salads, or Mexican casseroles. So versatile!

So, take a few minutes earlier in the day to throw these slow cooker chicken tacos together. When the evening chaos ensues, you’ll be so glad you did!

Ingredients
  

  • 1.5-2 lb chicken breast
  • 1-1/2 cups salsa
  • 2 tbsp taco seasoning *See my recipe for homemade taco seasoning, or use one packet of premade taco seasoning.

Instructions
 

  • Add chicken, salsa and taco seasoning to slow cooker.
  • Cook on low for 8 hours or high for 4 hours.
  • Shred chicken using two forks. Mix well to incorporate salsa and taco seasoning.
  • Eat immediately or turn to warm setting of slow cooker for up to two hours. Enjoy!
