Need a simple and healthy side dish for dinner tonight? Try this easy roasted vegetables recipe! It utilizes frozen vegetables and Italian dressing mix, so you can throw it together in no time any night of the week!

I love fresh produce, but I don’t always have it on hand. I try to limit my grocery shopping to one trip per week, so by the end of the week the crisper drawer is usually empty. But I still want to feed my family veggies, so I try to keep an assortment of frozen vegetables in the freezer. For this recipe, I used a mix of broccoli, cauliflower, and carrots. But you can use any kind of frozen veggies you have and your family likes.

Of course, you can also use fresh veggies if you have them. This method is a great way to use up leftovers or produce that is a little past its prime. The roasting process dries and crisps the veggies, so go ahead and toss in those bits and pieces that are a little wilted or soft.

My family eats their vegetables much better when they are seasoned with flavors they enjoy. We all love Italian seasoning, so I always keep a packet of Italian dressing mix on hand. It’s a super simple way to add some flavor we all enjoy to vegetables, meat or pasta. Ranch seasoning is also a good option.

For this recipe, just mix your frozen vegetables with a little oil and a packet of Italian dressing mix. I do this right on my baking sheet so I don’t have to clean another dish! Then just roast in the oven at 425 degrees for 30 minutes or so, until your veggies are cooked through and slightly browned.

I like to make a big batch at once and use the leftovers throughout the week. These veggies are great in pasta, stir fry, omelets, or really any dish you want to sneak some veggies in! Go ahead and make these tonight! I know you and your family will love them!

Ingredients
  

  • 1 16 oz bag frozen vegetable medley *I used broccoli, cauliflower and carrots
  • 2 tbsp cooking oil *I prefer avocado or olive oil
  • 1 packet Italian dressing mix *Substitute Ranch seasoning if you prefer

Instructions
 

  • Preheat oven to 425 degrees.
  • Pour frozen vegetables onto large sheet pan. Add oil and Italian dressing mix. Toss together to coat.
  • Bake at 425 degrees for 30 minutes, or until crisp and slightly browned. Remove from oven and stir after 15 minutes.
