Before I had kids, I really enjoyed baking. It was fun to experiment with different recipes and try out new flavors and combinations. These days, however, I find it really time consuming and cumbersome. Prepping breakfasts and lunchboxes and getting dinner on the table takes all the time and energy I’ve got.

If I get the time to squeeze in a fun treat, it’s got to be really simple and not take up too much of my time. That’s why I just love this 2-ingredient pumpkin cookies recipe! It could not be any simpler to make, and it makes the whole house smell wonderful! Plus, they taste really good, too. Kind of a cross between a cake and a cookie, and with that perfect spicy fall flavor.

All you need for the cookies is a box of spice cake mix and a can of pumpkin puree. You just mix those two things together, either by hand or with a mixer, until everything is incorporated. I prefer mixing them by hand, just because I hate dragging out my big, heavy stand mixer and then having to clean it up. But you do you, either method works here.

Then, just line a baking sheet with parchment paper and spoon or scoop your dough onto the baking sheet. Pop them in a preheated oven for around 15 minutes. Take them out and let them cool, and then you’ll have delicious pumpkin cookies! I use the word cookie a little loosely here, because they are more cake-like in their consistency, and they tend to rise up like a cake instead of spreading out like a cookie. But the taste is perfectly pumpkin spicey, and I quite enjoy the texture myself.

Now, if you want to make them extra special, you can make a super simple glaze to drizzle over the top. It only takes 3 more ingredients and a couple extra minutes. And the cookies look so pretty and taste even better!

Just mix a cup of powdered sugar and a teaspoon of vanilla with just enough milk to get the right consistency. Start with just a tablespoon, it doesn’t take much. A little stirring action will make the magic happen and turn that sugar into a shiny, smooth glaze. You can add a little more milk, up to a tablespoon, to get the right drizzling consistency. Then just drizzle over the top of the cooked, cooled cookies. Now they look like a million bucks!

Ingredients
  

  • 1 box Spice cake mix
  • 1 15 oz can pumpkin puree
  • 1 cup confectioner's sugar
  • 1-2 tbsp milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 375 degrees.
  • Combine cake mix and pumpkin puree in a large bowl. You can use a large spoon and some elbow grease or a mixer to mix until well incorporated.
  • Line a baking sheet with parchment paper or grease well.
  • Using a large spoon or ice cream scoop, spoon dough into cookie sized shapes onto prepared cookie sheet.
  • Bake 14-16 minutes at 375 degrees, or until toothpick inserted in center comes out clean.
  • Let cool 5 minutes.
  • Combine powdered sugar, 1 tbsp milk, and vanilla in a small bowl and stir well until you achieve a smooth, glossy consistency. Slowly add up to 1 more tbsp of milk if needed.
  • Drizzle glaze over cooked, cooled cookies. Enjoy!
  • Store in airtight container for up to 5 days.
