This easy quiche is perfect for a weekend breakfast, and it can serve double duty as meal prep for the week! It comes together in no time with just a handful of ingredients. And you can easily swap out ingredients to use what you have on hand or what your family prefers.

I don’t really get a chance to make breakfast for my family during the week, so I love to cook something yummy for them on weekend mornings. We always have a lot of eggs around thanks to our awesome backyard chickens, so this quiche is a perfect way to use those up! It also reheats really well. If you have any leftovers, store them in individual containers and use them throughout the week for meal prep. Doubling up and making two of these would be a great idea!

The filling of this easy quiche starts with eggs and milk. You just whisk those together with a little salt, pepper, and any other seasoning you like in your eggs. I love Shake Tasty by Fire & Smoke Society, but feel free to use whatever seasoning you like. Now you can add any meat, cheese, or veggies your heart desires! I always have deli ham and shredded cheddar in my fridge, and my family really likes that combination, so that’s what I usually stick with. But feel free to mix it up with whatever your family likes or what is in your fridge.

Once your filling is all mixed up, you need to get your pie crust ready. I buy the premade refrigerated pie crusts, and simply roll them out into the bottom of a pie pan. But you can also use frozen pie crusts that are already in a tin. You probably need the deep dish version for this recipe. Or, if you are really smart and have some free time, you can use a homemade pie crust. Any of these options will work great. Choose the one that works best for you.

Now that your pie crust is ready, simply pour your filling into the crust and carefully place it in the oven! Sit back and enjoy a cup of coffee while your quiche bakes. Once it’s done, you’ll need to let it cool a few minutes before you dig into it. Be patient, it’s worth the wait!

If you have any leftovers, store them in the fridge for up to a week. Like I said, this easy quiche is the perfect recipe to double up on and reheat throughout the week. Who doesn’t love weekend brunch and meal prep all in one easy recipe!

Ingredients
  

  • 4 eggs
  • 1-1/2 cups milk
  • salt, pepper, and seasoning, to taste *I like Shake Tasty by Fire and Smoke Society
  • 2/3 cup deli ham, diced *Use any protein you like
  • 2/3 cup shredded cheddar cheese *Use any cheese you like
  • 1 unbaked pie crust

Instructions
 

  • Preheat oven to 375 degrees.
  • In a large bowl, whisk together eggs, milk, salt, pepper and seasoning.
  • Add in ham and cheese, or any other meat, cheese or veggies you prefer.
  • Roll out pie crust into the bottom of a pie dish, or prepare crust as directed.
  • Pour filling into prepared crust.
  • Bake at 375 for 30 to 40 minutes, until eggs are set and top is lightly browned.
  • Let cool 5-10 minutes before serving. Enjoy!
