This chocolate chess pie recipe is my most loved recipe of all time. Fudgy, creamy, sweet and delicious, and you won’t believe how simple it is to make! It keeps and travels well too, making it my go-to recipe to make for friends and family during the holidays.

All you need for this chocolate chess pie is just a few simple ingredients- chocolate, butter, eggs, sugar, and vanilla. Make sure you’re using good quality ingredients, since it’s such a simple recipe. Choose a chocolate that you enjoy the taste of, and a high-quality vanilla, because these are the standout flavors of the pie.

The method is super simple, too. You’re going to start by melting your chocolate and butter together. I always just do this in a bowl in the microwave, but you could also use a saucepan on the stovetop. Once everything is melted, just mix together and set aside to cool a little.

Next, in a separate bowl, mix your eggs, sugar, vanilla and salt together until everything is well incorporated. Then you’ll slowly stir in your chocolate mixture, being careful not to cook the eggs! I like to add in a little at a time and mix well, so the mixture is slowly warmed, instead of adding all that hot liquid at once.

Once everything is smooth and incorporated, just pour the mixture into prepared pie shells and bake! One day I’m going to learn how to make homemade pie crust, but until then, I just use the store-bought crusts. A regular frozen pie crust (not deep dish) is perfect for this recipe.

The secret to the perfect fudgy consistency of this chocolate chess pie is the perfect baking time. If it’s undercooked, it will still be runny in the middle. If it’s overcooked, it can get a little too crispy. I have found that 35 minutes at 350 degrees is perfect in my oven. Since every oven is different, you may have to play around with the cooking time a little. To test for doneness, just give your pie a little shake. If it’s too jiggly, it’s not done yet. And if it doesn’t move at all, then it’s too done! You want just a little jiggle for a perfectly cooked pie!

Now, just let it cool for at least 30 minutes, and you’ll have the most delicious, chocolatey, melt in your mouth pie you’ve ever tasted! I like to serve it with a little whipped cream on top. It’s also amazing with ice cream, or completely unadorned.

This chocolate chess pie can sit out at room temperature for several days. It also travels well, so it’s the perfect recipe to take to a holiday party or event. Just be warned, you better double the recipe, because it goes quickly!

Ingredients
  

  • 1 unbaked pie shell
  • 1 stick butter
  • 2 ounces baking chocolate *I use Baker's unsweetened chocolate
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 dash salt

Instructions
 

  • Preheat oven to 350 degrees.
  • In a microwavable bowl, add butter and chocolate.
  • Microwave for 1 minute, stir well. If mixture is not completely melted, continue microwaving in 30 second increments, stirring in between.
  • Once butter and chocolate are melted and combined, set aside to cool.
  • In a large bowl, combine sugar and eggs until smooth. Add vanilla and salt, stir well.
  • Slowly add cooled chocolate mixture to sugar and egg mixture. Stir until smooth.
  • Pour mixture into unbaked pie crust.
  • Bake at 350 for 30-40 minutes, until center of pie is set.
  • Let cool completely. Enjoy!
