Meatball Subs
Do you ever have those nights where you just can’t get it together? When your to-do list is too long and your motivation is too low? Or maybe you just forgot about dinner all together. Maybe it’s just me. But if you have these nights too, then this meatball sub recipe is for you!
It literally requires no time to throw together, and just a handful of ingredients that you can easily keep on hand. And it’s a crowd pleaser. No one can resist a saucy, cheesy meatball sub!
First, you need a package of frozen meatballs. Any kind will do. I try to keep some on hand for emergency situations like these. You can totally use homemade meatballs here too, if you have them.
Next, get a jar of marinara sauce. Any brand, any type. Whatever your family likes. I know you probably have a jar in the pantry somewhere.
Now, you just throw your meatballs and sauce in a crockpot. You can do this in the morning and cook them on low. Or, if you’re like me and you’re in a last-minute dash to throw something together for dinner, you can crank it up on high and they’ll be done in just a couple hours. It’s totally no fuss, just let them hang out together for a little while, or a long while, whatever time you have.
Okay, this next step takes just a few minutes, but it’s going to make your meatball subs extra special! Get some sub rolls and open them up on a baking sheet. Spread the top side of each roll with butter and sprinkle them with garlic salt. Then top the bottom rolls with sliced provolone cheese, or whatever good melting cheese you have on hand that your family prefers. Once that’s done, throw the baking sheet in a hot oven for a few minutes until the bread is toasty and the cheese is melty.
Once your bread is done, fill the rolls with as many saucy, delicious meatballs as you can fit on there. Voila, dinner is ready! Perfectly cheesy, melty, meaty goodness! No one will ever guess that you threw this together in exactly 2.5 minutes. And you’ll probably have some leftover meatballs for lunch the next day!
Meatball Subs
Ingredients
- 1 28 oz package frozen meatballs
- 1 24 oz jar marinara sauce
- 6 sub rolls
- 6 tsp butter
- 1 tsp garlic salt
- 6 slices provolone cheese
Instructions
- Place frozen meatballs and marinara sauce in slow cooker. Stir together until all meatballs are covered in sauce.
- Cook on low for 4 hours or high for 2 hours. Once cooked through, they can remain on the warm setting for several hours until you are ready to serve.
- Preheat oven to 400 degrees. Open sub rolls and place on large baking sheet.
- Spread butter on the top portion of each sub roll and sprinkle with garlic salt.
- Place cheese slices on bottom portion of each roll.
- Bake rolls at 400 degrees for 10 minutes, or until bread is toasted and cheese is melted.
- Fill rolls with meatballs and sauce. Serve immediately. Enjoy!
