Tortellini Soup

If you’re craving a cozy pot of soup but don’t have much time or energy, try this super simple tortellini soup recipe! It comes together in no time, and you only need a handful of ingredients.

I love to let a pot of soup simmer on the stove all day on cool fall days. But most days, I don’t really have time for that. But that doesn’t mean that my family can’t enjoy a delicious bowl of soup any evening of the week!

To make this delicious tortellini soup, you only need about 20 minutes and a few ingredients. Most of them you probably already have in your pantry or fridge!

To make a quick, flavorful broth, combine a jar of marinara sauce, a container of chicken broth, and some water in a big pot. Use your favorite marinara or pasta sauce here. The herbs and spices in it are going to make this broth taste like it’s been simmering all day! The chicken broth adds a bit more depth of flavor, and the water thins it out to the proper consistency.

Once your broth has come to a low boil, go ahead and add in your tortellini. Any kind will work- frozen, fresh or dried. Just adjust your cooking time accordingly. I typically use cheese tortellini, but any kind will work here. Once the tortellini are floating in the top of the broth, they are done!

Now it’s time to add some creaminess with some heavy whipping cream or half and half. I use half and half because I always have it in my fridge, but heavy cream would make the soup even more indulgent! You’re also going to add some grated parmesan cheese for some salty, cheesy action, and some spinach to bump up the nutrition and make this soup more of a meal.

Just stir until the cream and cheese are incorporated and the spinach is wilted, just a couple of minutes. And guess what? You’re done! That’s it! Dinner is ready! Just be careful, it will be super hot! You’ll probably want to let it cool for a few minutes.

I love to serve this soup with some yummy garlic bread to soak up all the broth. Grilled cheese or some sort of cheesy bread would also be really delicious. And you can reheat the leftovers. Just beware, the tortellini will soak up the broth, so you may need to add a little liquid to it.

Ingredients
  

  • 1 24 oz. jar marinara sauce
  • 1 32 oz box chicken broth
  • 2 cups water
  • 16 oz cheese tortellini *refrigerated, frozen or dried
  • 1 cup heavy whipping cream or half and half
  • 1/2 cup grated parmesan cheese
  • 4 cups spinach

Instructions
 

  • In a large pot, add marinara sauce, chicken broth, and water over medium to medium-high heat and bring to a boil.
  • Add in tortellini, cook 3-4 minutes or until tortellini floats to the top. Adjust cooking time according to the type of tortellini you use. Frozen and dried will take a little longer.
  • Add in cream or half and half, parmesan cheese and spinach. Cook 3-4 minutes until cream and cheese are incorporated and spinach is wilted.
  • Let cool 5 minutes. Serve will crusty bread for dipping.
