Tortellini Soup

If you're craving a cozy pot of soup but don't have much time or energy, try this super simple tortellini soup recipe! It comes together in no time, and you only need a handful of ingredients.

Ingredients
  

  • 1 24 oz. jar marinara sauce
  • 1 32 oz box chicken broth
  • 2 cups water
  • 16 oz cheese tortellini *refrigerated, frozen or dried
  • 1 cup heavy whipping cream or half and half
  • 1/2 cup grated parmesan cheese
  • 4 cups spinach

Method
 

  1. In a large pot, add marinara sauce, chicken broth, and water over medium to medium-high heat and bring to a boil.
  2. Add in tortellini, cook 3-4 minutes or until tortellini floats to the top. Adjust cooking time according to the type of tortellini you use. Frozen and dried will take a little longer.
  3. Add in cream or half and half, parmesan cheese and spinach. Cook 3-4 minutes until cream and cheese are incorporated and spinach is wilted.
  4. Let cool 5 minutes. Serve will crusty bread for dipping.
